A Bit About Me

Welcome to my page—I’m so glad you’re here! My name is Olivia Pollack, and I’m a senior at Vanderbilt University majoring in Economics with a minor in Spanish. I was born and raised in New York City, but my curiosity about the world has taken me far beyond it. So far, I’ve visited 32 countries and counting, with plans to explore even more this upcoming summer.

Among all of my adventures, the most transformative by far was my semester abroad in Barcelona, Spain. It wasn’t just a trip—it was an immersion. I lived, studied, and embraced the culture in a way that changed how I see the world and myself. I studied at Pompeu Fabra University, took classes alongside international students, learned about Catalonian history and politics, and explored the flavors of traditional Spanish cuisine. Beyond Barcelona, I spent weekends traveling to eight different countries across Europe, each offering its own unique culture, cuisine, and story.

This site is a way for me to capture and share the memories, especially through the lens of food. Here, I’ll be documenting the many flavors I encountered during those unforgettable four months—meals that helped me connect with locals, understand new customs, and experience Spain with all five senses.
